As far as Santorini is concern, you have to book well in advance, for Mykonos as well. If you love going out for most of your holiday then best to stick to the nightlife. If you enjoy easy evenings while spending most of your days by the beach then you can stay near the beaches and still opt for a few evening of heading into the town. Also bear in mind that even when you stay near the beach there will be hotel restaurants close by to for romantic evenings out.
